Unless you are referring to BYU's streaming video feeds:

http://uptime.netcraft.com/up/graph?site=lds.org
OS: F5 Big-IP (front end)
Server: IBM_HTTP_Server

http://uptime.netcraft.com/up/graph?site=mormontabernaclechoir.org
OS: Linux
Server: AOLserver/3.3.1+ad13

Streaming video and voice for the MormonTabernacleChoir.org is
coming from v24.lscache6.c.youtube.com right now. That is sffe
running on Linux. The MormonTabernacleChoir.org also makes
extensive use of i1.ytimg.com, and i2.ytimg.com, both aliases
to ytimg.l.google.com which uses the GFE/2.0 server running on,
you guessed it - Linux. But they have the advantage of starting
late in the game and going for the best stuff.

As for BYU TV, once you go down that track it is kind of hard to
switch horses while you are going at full gallop. Also, both
Microsoft-IIS/6.0 & Microsoft-IIS/7.0 offer spying features that
once you get used to them make them awfully hard to give up. Pointy
headed managers like that kind of stuff.
