Here's the correct answer (thanks to a co-worker)

 > cryptsetup status dave  # 'dave' is the name of the node in /dev/mapper
/dev/mapper/dave is active:
   cipher:  aes-cbc-essiv:sha256
   keysize: 128 bits
   device:  /dev/sdb1
   offset:  1032 sectors
   size:    498648 sectors
   mode:    read/write
