need a hosted file server solution

Why not just pick up a $300 NAS on Newegg or something?  These days you 
can get RAIDed 500GB drives in a nice little enclosure that you just 
plug into the network and configure via a web interface.  All of them 
have SMB (some have NFS) so it should be a snap to mount it on the 
Windows desktops.
