Fedora updates are done by the community, but FC5 is soon be to at
end-of-life based on the fast release cycle that Fedora uses.  I think
Michael is suggesting something a little less bleeding-edge for your
server--something that doesn't have a new version every 6 months.

RHEL5 is subscription based only from my understanding but downloading
CentOS 5 is going to pretty much give you RHEL 5, without the subscription.

On a non-FC/RHEL/CentOS note: I run my servers on Ubuntu, but use the
LTS (Long Term Support) release 6.06.1 as it is still supported for some
time, despite also having other interim releases (currently 7.04).
