I highly recommend memorizing the POP and SMTP protocols.  I've
forgotten them in the past few years since I haven't been
administering servers (administrating? anyway I haven't been a server
admin) but when I was, having the protocols memorized helped immensely
when troubleshooting mail problems.  And when I say "troubleshooting
mail problems' what I really mean is "convincing customers that the
problem is not with our server."

They're really quite simple.  You could even write up a cheat sheet to
help out until you've fully committed them to memory.
