For full performance with DDR2 you always need pairs of sticks.
Otherwise you won't get the full memory bandwidth DDR2 is capable of.

So if you are limiting yourself to only buying 1 GB, then the 2 512s
will be faster.  

Seems to me it's not that expensive to get 2 GB of ram (with 2 1 GB ddr2
sticks), though.  RAM never hurts servers.
