I do have experience entering text in Spanish under Linux,
using both the standard Spanish keyboard layout and the "US
International" layout (similar to the one in Windows).  I also
have a co-worker who regularly enters Chinese text using Linux.
I'm sure that all of the languages you listed are supported.
